Mahi Mahi with Tomato Lemon Sauce

Ingredients

  • 4 Mahi Mahi Fillets, Thawed and Patted Dry
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • 2 tbsp. Olive Oil
  • 2 cups Cherry Tomatoes, Halved
  • ⅔ cup Red Onion, Finely Diced
  • 4 cloves Garlic, Minced
  • ½ cup Chicken Stock
  • 1 tbsp. White Wine Vinegar
  • 1 tbsp. Lemon Juice
  • 1 tsp. Lemon Zest
  • 2 tbsp. Thyme, Chopped

How to Make:

    Step 1

  1. Generously season fillets with salt and pepper. Heat olive oil in a large skillet on medium high heat.
  2. Step 2

  3. Once hot, cook fillets for 3 minutes until they are golden brown in color. Flip over and cook for 3 minutes on the other side. Set the cooked fillets aside on a plate.
  4. Step 3

  5. Add the tomatoes to the pan and leave them to cook for 4 minutes, until they begin to blister. Then add in the diced red onion and garlic and cook for 1 minute, until fragrant. Next, add the chicken stock, white wine vinegar and lemon juice to the pan. Bring to a simmer and leave to cook for 4 minutes. Stir in the lemon zest and chopped thyme.
  6. Step 4

  7. Return the mahi mahi fillets to the pan. Spoon the sauce over top each fillet before serving. Serve with a side of asparagus and garnish with thyme.
