Pepper 2 tbsp. Olive Oil 2 cups Cherry Tomatoes, Halved ⅔ cup Red Onion, Finely Diced 4 cloves Garlic, Minced ½ cup Chicken Stock 1 tbsp. White Wine Vinegar 1 tbsp. Lemon Juice 1 tsp. Lemon Zest 2 tbsp. Thyme, Chopped How to Make: Step 1 Generously season fillets with salt and pepper. Heat olive oil in a large skillet on medium high heat. Step 2 Once hot, cook fillets for 3 minutes until they are golden brown in color. Flip over and cook for 3 minutes on the other side. Set the cooked fillets aside on a plate. Step 3 Add the tomatoes to the pan and leave them to cook for 4 minutes, until they begin to blister. Then add in the diced red onion and garlic and cook for 1 minute, until fragrant. Next, add the chicken stock, white wine vinegar and lemon juice to the pan. Bring to a simmer and leave to cook for 4 minutes. Stir in the lemon zest and chopped thyme. Step 4 Return the mahi mahi fillets to the pan. Spoon the sauce over top each fillet before serving. Serve with a side of asparagus and garnish with thyme.
